Rice Meat Cutlet


Ingredients: 2 cups cooked rice,1 cup meat,1 small onion,2 green chillies,2 tbs coriander(chopped),1/2 tsp pepper, salt to taste, oil for frying.

(1)Remove all bones from meat and trim off fat. Cut into cubes and refrigerate for half an hour.

(2)Put cooked rice in mixer and run till coarsely ground. Add little salt to the coarsely-ground
rice.

(3)Chop onion and sauté in saucepan with a little oil till it becomes soft and transparent.

(4) Add chilies, salt and pepper. Cook for one minute

(5)Mince the meat.

(6)Add the minced meat to saucepan and fry till it turns brown. Mix coriander.

(7)Shape rice into flat balls. Fill with meat and form into cutlets.

(8)Deep fry in oil till golden brown.

(9)Serve hot with tomato ketchup.

Note: The above mentioned quantity is sufficient for 8 rice meat balls.

Iced Coffee

Ingredients: 6 tsp instant coffee, 2 cups ice cubes, 3 tbs sugar, 1 cup boiling water, 4 cups Cold milk, 4 tbs cream.

(1).Dissolve instant coffee and sugar in boiling water. Let cool.

(2).Whip the coffee mixture and cold milk. While running, add ice cubes.

(3).Add cream and whip for a further 30 seconds.

Serve chilled in glasses.

Tandoori Chicken

Ingredients:1 kg chicken,1/2 cup curds,12 cloves of garlic,2 tsp coriander seeds,1/4 tsp ginger,1 tsp black cumin seed,2 tsp lemon juice,2 tsp vinegar,8 chillies,2 tsp cooking oil, 1 tsp red color, ghee for basting, salt to taste

(1)Grind coriander seeds, chillies, and black cumin seeds till finely powdered.

(2)Add garlic, ginger, curd, salt, cooking oil and vinegar and run mixer. Add coloring.

(3)Clean and dry chicken. Make slits over breast and legs

(4)Apply lemon juice and salt all over. Marinate for half an hour.

(5)Apply ground paste over chicken and marinate further for about two hours.

(6)Roast either on hot electric grill for 30 – 40 minutes or an open charcoal grill for 15 – 20 minutes. Keep applying ghee while roasting.

(7)When chicken is cooked, remove from grill. Serve along with finely sliced onion rings and a twist of lemon.

Meat loaf

Ingredients: 500 g meat,1 medium-sized onion, 4 cloves of garlic,2 eggs ,4 tbs breadcrumbs(dry),1 egg (hard boiled),salt and pepper to taste,1 tbs butter.

(1)Cook meat. Then remove and cool. Remove all bones and trim off fat from meat. Cut into cubes.

(2).Put meat into jar and run the mixer .Remove minced meat and keep aside.

(3)Grate onion and garlic.

(4)Remove and fry in a little oil till light brown.

(5)Add slightly-beaten eggs, breadcrumbs, salt and pepper to the minced meat, place in jar and run the mixer for 1 minute.

(6)Shape into two flat rectangular pieces, each 1 1/2” thick.

(7)Arrange slices of one hard-boiled egg on one piece, then place the other on top.

(8)Dot with butter and bake till slightly brown.

tomato soup


Ingredients: 1 k g tomatoes, 4 medium-sized onions,1 coconut, few curry leaves, salt and pepper to taste ,bread croutons.

(1)Boil tomatoes and onions, add salt and pepper.

(2)Grind till it turned to fine paste.

(3) Remove and return to fire, adding water and curry leaves.

(4)Grind coconut pieces separately adding little water.

(5)Extract coconut milk from this, add to soup and boil further for 10 – 15 minuts.

Serve hot with bread croutons

mango milk shake


Ingredients: 2 cups mangoes, cubed ;1/2 litre milk, 6-8 tbs granulated sugar, ice cubes.


(1) Place cubed mango pieces with a little milk in jar and run mixer.

(2) When turned to smooth paste, Add rest of milk, sugar and ice cubes. Run for 30 Seconds.

Serve chilled in tall glasses.

Save Time Cooking


There are many ways to help speed and efficiency in the kitchen. The arrangements of your kitchen, as well as the tools you use, make all the difference. Try these suggestions to make gourmet cooking well within your time constraints.

Put the same things in the same place in your kitchen and work area. You will not waste time trying to find things and get frustrated. Tools and items that are frequently used should be placed accessible and easy to get. The bowl or platter you only use at Thanksgiving can be placed in the basement or in the back of the cupboard. It is also worth noting that you won't know if something works until you try it and you might make changes as time goes by.

If you are among the population that think making homemade bread is a horribly long process that you do not have time for, invest in a mixer, it does all the work! While the ingredients combine you can spend your time checking a recipe, loading the dishwasher, or making a call. When choosing a mixer consider the quart size capacity of the bowl and wattage of the mixer. This is important because a smaller, less powerful machine will not be able to handle some quantity of ingredients. More time will be spent mixing by hand and cleaning up than if you would have done it without the machine to start with. Another important thing to note about a free standing mixer is their ability to do so many different tasks. Whipping, whisking, blending, and kneading, can all be done without you participating at all. Not only does this save time, but it also saves effort, freeing up energy for other aspects of preparation.

Another time saving product that will help you cook like a pro is a food processor. Different jobs need different sizes and so it is recommended to have a smaller and larger capacity processor. Chopping onions, garlic, tomatoes, peppers, nuts, etc. is quick and easy. Those items you frequently use do not need to take so much time to prepare. Use the tools that speed your work and you will be more apt to do more of it.

One of the most frustrating and time taking occurrences is running out of measuring cups or spoons . More than one set is needed to cook efficiently. Two to three sets will allow you to be quick in measuring without having to stop and wash (and then thoroughly dry) measuring tools while you cook. Having a set of odd sized cups and spoons makes cooking and baking faster and easier also. A two cup, one and a half cup, 2 tablespoon, half teaspoon measures are a great time and ease saver.

The time saved making delicious dinners, breads and treats will allow you to spend time that you want to working or playing without sacrificing making good food yourself. Cooking gives so much more to a person that food on the table. It allows for relaxation, contemplation, creativity and enjoyment.
